Back in the 1990s, the Nicaraguan government aimed to increase the quantity of coffee production in order to rebuild the country from the civil war. Afterwards, the producers found that improving the quality would bring them to the speciality coffee market and planted specific varieties such as Gesha or Pacamara. Coffee production in Nicaragua is shifting towards a mindset of quality over quantity. They’ve been experimenting with how they control the fermentation to help create their ideal flavour while managing temperature and humidity to encourage the activities of bacteria. And they offer financial support, quality control, milling, processing and exporting services to neighbouring producers who have the same passion and values.
